2 | Venison Sausage | Slice a 3 to 4 inch section off the link and slice it into 1/4 inch slices. Whittington's Meat Processing, in Johnson City, Texas, makes the best venison sausage that I have ever eaten. You supply your own deer! They will butcher, add pork, stuff the sausage, and store it for you! If you don't have the time or inclination to harvest your own deer, HEB sells a venison and pork sausage. Although it is no match for Whittington's venison sausage, it will do in a pinch. | |
3 | Fried Eggs |
Fry them in a cast-iron skillet over easy or medium. Leave the yellow runny for the grits. |

4 | Confederate Coffee | You can often find the Cafe Du Monde brand at your local H.E.B. But I prefer to order the chickory from New Orleans Roast and mix it with coffee that I have ground myself. | |
5 | Butter | For the grits! Don't be shy with the butter. | |
6 | Salt & Pepper | To taste | |
7 | Milk | Some people like to use milk to prepare the grits, or to flavor the coffee. I usually skip the milk. | |
8 | Cane-bottomed Rocking Chair | Perhaps the most important ingredient. After eating the grits, sausage, and eggs, go sit in the rocking chair and enjoy another cup of coffee as you contemplate the wonders of the morning! |
